Celebrate Huckleberry Season with Huckleberry Greek Yogurt Bark!
Huckleberry season is here! Check out this recipe for Huckleberry Greek Yogurt bark, a no-bake delight to satisfy your sweet tooth and make the most of those perfectly ripe huckleberries:

  • 2 cups plain Greek yogurt
  • 1 cup fresh huckleberries (or blueberries)
  • 3 tbsp honey (adjust to taste)
  • 1 tsp vanilla extract
  • ¼ cup chopped pecans or almonds (optional), or raspberries, blueberries, and dried cranberries!

Combine Greek yogurt, honey, and vanilla extract until smooth.
Pour the yogurt mixture onto the baking sheet and spread it evenly to about ½ inch thick.
Add your toppings evenly, then freeze for at least 4 hours.
Break into bark and serve!

Saturday, August 16th Annual Wings Over Sandpoint Fly-in
Regional pilots fly into Sandpoint Airport to provide a display of aircraft ranging from general aviation to antique, float plane, and experimental craft. Big country breakfast from 8 a.m.-10:30 a.m.; $8 kids, $12 adults and funds benefit the Sandpoint EAA Chapter 1441 Flight Scholarship Program for high school students. Aircraft display is free and runs until about 1:30 p.m. 208-264-8855.

Sept 1 Fall Fest. Enjoy four days of beer tasting and fun at Schweitzer. Bring your blankets as there will be live music all weekend. The beer tent will be on the tennis courts near the bottom of the Great Escape Quad so you’ll never be too far from the beer. The party continues Saturday, Sunday and Monday.
